If I choose to back up all of my hard drive, can this be stored on an external hard drive and restored if needs be from that please?

Yes. That should not be a problem for WinRescue.

Sorry I did not think of this before, but should I need to restore the whole hard drive (backed up through WinRescueXP to an external hard drive), will WinRescueXP do this too automatically via the Restore Wizard? Would there be any others steps I would need to take please?

Please be aware that backing up the entire drive with WinRescue is not the same as making an image of the drive. WinRescue just backs up files.
This is meant to be used as a backup in case you need to restore individual files. It can be used to restore the entire drive, but it is not easy (and if Windows was on that drive, it will have to be reinstalled first). You can try using the Crash Fixer but that probably will not restore all of the files. The best thing to do is to use the Extractor to restore each backup file (which are many).

Thanks for the clarification. I was unsure whether WinRescueXP made an image of my hard drive or not.
