I have a perfectly good HP Scanner 3400C & a large capacity B&W Xerox Docuprint P12  printer and no one is offering an updated driver for either.
What is the point of Win7 if you can't update the peripherals?
Absolutely ridiculous.

Your frustration is perfectly understandable when you have good, older equipment!  When you state that "no one" is offering drivers for W7, so you mean Microsoft, HP, Xerox?  You may want to try looking for Vista drivers.  I did that for an older HP printer and it works just fine with W7.  Sometimes you have to dig around on the manufacturer's site to find the alternatives for older, obsolete equipment
