I have seen some E.Mail clients e.g: INCREDIMAIL where they give you the choice to BOUNCE the unwanted mail as well as creating a SPAM filter.
Does anybody know if this bouncing of message actually works.

It all depends on whether it is responsible spam or not.
The idea is that the returned email will be removed from the list because the list does not want to waste its time and resources sending to invalid email addresses.  There definitely are lists that use software which removes bounced messages (our newsletter does), but it doesn't seem like most spam emails are sent out with that type of software.
I have tried bouncing spam messages and less than 1% was removed from the lists.
Most spam is actually the result of someone having a virus on their computer and so bouncing does nothing but put more spam out there (since the return email address is actually an innocent person's address found on the infected computer).
Of the spam that does not come from viruses, a high percentage try to hide where the email came from, so they are not going to have a valid return email address to bounce the spam to.
I finally quit bouncing the spam because it just took more time and did not seem to do any good.
